Book airfare either really early or really late. Buy before the advance purchase price-hiking benchmarks; airline ticket prices typically go up 21 days, 14 days, 7 days and 3 days before flying. Or, if you're more of a fly-by-the-seat-of-your-pants kind of traveler, many times there are last-minute tickets available at a great price, if the airlines haven't filled their planes.
